Batches & lots
Every delivery is its own lot with a sell-by date. Sales always use the earliest sell-by date first (FIFO / FEFO), so food is used before it spoils.
Simulate a sale
Each menu item has a recipe. Ingredients come out of the batch with the earliest sell-by date.

Procure-to-pay
Follow every order from request to payment: requisition → approval → PO sent → goods receipt (partial OK) → vendor invoice → 3-way match → invoice approval → payment → closed.
Vendor master
Purchase orders pull the vendor, terms, lead time and cost from here. The preferred active vendor for an item gets the order.
Accounts payable
Vendor invoices with due dates calculated from each vendor's payment terms.
